Chicken Teriyaki Tacos With Pineapple Salsa



  1. In a large mixing bowl, combine chicken, vegetable oil, garlic, ginger, salt and pepper. Set aside to marinate for 30 minutes.

  2. While the chicken is marinating prepare the pineapple salsa and teriyaki sauce. Combine all of the salsa ingredients, and set aside until ready to use. For the teriyaki sauce, combine the honey, mirin, sake and soy sauce; set aside until ready to use.

  3. Heat a large skillet over medium heat. Add chicken and fry until golden brown. Add the teriyaki sauce, let the sauce boil and toss the chicken to make sure it’s evenly coated. Once the teriyaki sauce has turned into a thick glaze, the chicken is done. Remove from heat.

  4. Build your tacos. Start with either a flour tortilla or butter lettuce. Add rice, a spoonful of chicken and top with pineapple salsa.

  • 3-4 skinless, boneless chicken breasts, cut into ½-inch pieces

  • 2 cups pineapple, grilled & diced

  • 1 lime, juiced

  • ⅓ cup red pepper, diced

  • ¼ cup red onion, chopped

  • 1 Tbsp cilantro, chopped

  • 1 jalapeño, seeded and minced

  • Salt and pepper
